COFU is a Vancouver-based Japanese dining group that offers a refined, plant-based interpretation of Japanese cuisine. Rooted in traditional Japanese culinary values, COFU’s food is guided by seasonality, Japanese techniques, and deep respect for ingredients. Rather than starting with veganism as a concept, the cuisine evolves naturally toward a plant-based expression through simplicity and careful craftsmanship. COFU operates multiple dining concepts in Vancouver, including its original pressed sushi restaurant near Granville Island, COFU Pressed Sushi, and COFU Chinatown, home to one of the city’s first fully plant-based omakase experiences. The group also operates Hush Coffee Store, a modern tea house (chaya) inspired café offering matcha, hojicha, and Japanese comfort food in a calm, welcoming setting. Across all concepts, COFU focuses on vegetables, grains, seaweeds, fruits, and tea—without relying on imitation meats or substitutes. Each space expresses a different rhythm, from omakase dining to casual sushi and tea, while sharing the same underlying philosophy. At COFU, food and drink are designed as experiences rather than replacements. Attention is given not only to taste, but also to aroma, temperature, presentation, and the quiet moments between servings. This approach draws inspiration from shōjin cuisine, contemporary sushi, traditional tea culture, and fine dining. COFU’s philosophy is not about what is excluded, but what is honoured: ingredients, seasonality, balance, and hospitality. While entirely plant-based, its offerings are created to resonate with both vegan and non-vegan guests alike—offering a calm, thoughtful way to experience Japanese food and tea in a modern context.
